PRODUCTION AREA
Veneto, province of Verona, hilly area of ​​Valpolicella at an altitude between 180 and 280 m asl with calcareous clay soils.

GRAPE VARIETIES
Corvina Veronese 70%, Rondinella 25%, Oseleta 5%

VINIFICATION
Manual harvesting of the grapes in early October, soft pressing of the destemmed grapes.

FERMENTATION
In stainless steel tanks at a controlled temperature between 25/31°C for about 2 weeks.

REFINEMENT
12 months for 50% Slavonian oak and 50% French barriques.

ALCOHOL CONTENT 13.50% Vol.
TOTAL ACIDITY 5.40 g/l.
RESIDUAL SUGAR 5.60 g/l.

TASTING
Rather intense ruby ​​red color and moderate transparency. Aromas of fruits (cherry, plum and black cherry) to which tertiary qualities are combined, the result of the aging in cask of which the most frequent is vanilla as well as licorice and black pepper. In the mouth are found the identifying flavors of the opening, that is cherry, plum and black cherry, balanced by a pleasing roundness with a final almond aftertaste.

MATCH
It goes perfectly with roasted meats, especially pork, guinea fowl and game. Excellent with mushroom-based dishes and medium-aged cheeses.
