NAME Valpolicella Superiore DOC
Veneto, province of Verona, hilly area of Valpolicella at an altitude between 180 and 280 m asl with clayey limestone soils.
GRAPE VARIETIES Corvina Veronese 70%, Rondinella 25%, Oseleta 5%
VINIFICATION Manual harvest of the grapes at the beginning of October, soft pressing of the de-stemmed grapes.
FERMENTATION In stainless steel tanks at a controlled temperature between 25/31 ° C for about 2 weeks.
AGING 12 months for 50% Slavonian oak and 50% French barriques.
ALCOHOL CONTENT 13.50% Vol.
TOTAL ACIDITY 5.40 g / l.
RESIDUAL SUGAR 5.60 g / l.
Rather intense ruby red color and moderate transparency. Aromas of fruits (cherry, plum and black cherry) combined with tertiary qualities, the result of aging in cask of which the most frequent is vanilla as well as licorice and black pepper. In the mouth the identifying flavors of the opening are found, that is cherry, plum and black cherry, balanced by a pleasant softness with a final almond aftertaste.
It goes perfectly with roast meats, especially pork, guinea fowl and game. Excellent with mushroom-based dishes and medium-aged cheeses.
