PRODUCTION AREA
Veneto, province of Verona, hilly area of Soave, between 150 and 250 m asl on volcanic-calcareous soils with South-East exposure.
GRAPE VARIETIES
Garganega 80%, Chardonnay 20%
VINIFICATION
Manual harvest, soft pressing of the destemmed grapes, maceration on the skins for 15/18 hours at 10°C.
FERMENTATION
In stainless steel tanks at a controlled temperature of 15°.
REFINEMENT
4 months in steel plus 2 months in bottle before being placed on the market.
ALCOHOL CONTENT 12.50% Vol.
TOTAL ACIDITY 5.40 g/l.
RESIDUAL SUGAR 3.50 g/l.
TASTING
Straw yellow in color with greenish reflections, it has intense hints of wild flowers and white peach that reveal a vibrant vegetable note. Fresh with an inviting aromatic expression, it is pleasant on the palate with a dry, harmonious and slightly bitter flavour.
MATCH
Excellent as an aperitif, it is also recommended with vegetables in pinzimonio, fish dishes, seafood and herb risottos, asparagus and eggs and white meats.
