"BACK TO BASIC" PINOT NOIR VENICE DOC BIO
Organic and Vegan Wine
We care deeply about the responsibility of caring for and respecting our planet, so we try to improve ourselves every day. The new “BACK TO BASIC” line minimizes the impact of the wine supply chain on the environment. The certified organic and vegan grapes come from the Pinot Noir vineyards of the owned farm. Wine with a scent reminiscent of berries, blackberry, plum jam with notes of licorice. In the mouth the wine is delicate, fruity and typically acidic. Its light tannin gives it a full and pleasantly long taste.
In classic red. The hand-picked grapes are destemmed and pressed. This is followed by the grafting of the selected yeasts which will allow the start of the alcoholic fermentation for a duration of about 4-5 days; in the meantime, the operations of pumping over and punching down are carried out which favor the extraction of the polyphenolic compounds which characterize this wine. After the maceration period, a soft pressing is carried out which allows the marc to be separated from the wine: at this point, after a series of decantings, the wine will be aged in steel tanks until filtration and we will proceed to the bottling phase .
