Che tipo di vino è e come abbinarlo
Che la Bollicina fosse un must have per i nostri incontri, era cosa ovvia e scontata, ma che i Prosecchi non fossero tutti uguali, forse no. Infatti, ogni tipologia di Prosecco risponde a precise caratteristiche che influiscono sull’abbinamento in cucina.
Dal francese brut, ovvero «secco», l’omonima versione di Prosecco si caratterizza per una quota bassa di zuccheri residui, di solito inferiore ai 12 grammi per litro. La debole (o del tutto assente) traccia di dolcezza lo connota come un vino secco, al palato leggermente acidulo, nonostante la nota olfattiva fruttata, tendente alla mela e alla pesca.
Quello di Sempre è un Prosecco Doc Brut dal colore paglierino scarico, con residuo zuccherino 10gr/l. Per quanto non possa essere definito un vino amabile, il classico profumo fruttato lo rende un prodotto dissetante e piacevole a bersi. Inoltre, la gradazione alcolica lievemente inferiore allo standard (11% su 11,5%-12%) è il risultato di una ricerca volta ad aumentarne la freschezza e la possibilità di largo consumo.
Così la sigla DOC (Denominazione di Origine Controllata), che identifica la zona di coltivazione. Benché quest’area sia estesa a tutto il Friuli Venezia Giulia e una parte di Veneto, Sempre ha scelto di concentrarsi solo su uve del trevigiano, zona vocata al Prosecco.
Come abbinare in tavola il Prosecco Brut?
Il tono secco e acido lo rendono un vino ottimo per accompagnare i primi piatti, come la pasta e i risotti. Tuttavia, il vero carattere lo rivela nei secondi. Ideale per una frittura di pesce, dove il perlage fine e l’alto grado di acidità aiutano a sgrassare il palato, mantenendo un equilibrio di sapori con il gusto fruttato.
